    How to unhide value filed button on Chart?

    Sorry, not sure I totally follow on this one. Did you hide the PivotChart Field Buttons? If you're in Excel 2007 or higher, select your PivotChart and go to PivotChart Tools --> Analyze -->Show/Hide. On that group is the "Field List" and "Field Buttons" splitbutton. I'm guessing you just need to uncheck the "Hide All" on the "Field Buttons" splitbutton.

    I'm using Excel 2013 which is, admittedly, newer than your question. But I think it will be the same or similar and really I'm writing this for people who stumble upon this hoping for an answer.

    I found this option on the "PowerChart Tools" "Analyize" ribbon. On the right hand side there is a Field Button menu containing the options you need.
