    Instead of set the calculation formula, can I use the Pivot table value field setting to show the difference between 2 fields?

    Not unless you modify your source data to have that calculation in one of the fields. The "Value Field Settings" doesn't create new data, it just displays it.

    This is easy enough to do with a calculated field though... (attached)
