creating a chart for tracking history prices

Hi
I need to create a chart using excel to track the supplier history prices. To make it easier for you to understand my thread, I'll give an example:
let's say the supplier set a prices for a specific product as following:
Nov 07, 2017 $30
Nov 15,2017 $20
Dec 20,2017 $29

Now, the idea is that I want to enter the new price in the cell without losing the previous price so that in the end of every month I will be able to make a chart of history changes of the prices of the specific product.

One way is to have a separate row (record) for each price/date:
ProductDatePrice
Widget718/10/201736
Widget1027/10/201744
Widget609/12/201718
Widget623/10/201723
Widget1020/10/201732
Widget1001/10/201740
Widget816/10/201737

This becomes your history.
In the attached is a pivot table and chart allowing you to choose which product you chart. Once I'd put dummy data in, it took less than a minute to create the pivot and chart.
A point to note; over the Christmas period I only have access to a machine with Excel 2003. This means that the chart puts the dates equally spaced along the bottom, regardless of whether they're one day apart or several months. More recent versions of Excel handle this better.

I only need to track one product over a specific period of time in which the price changes. Can you help me please
